Potato Leek Soup
My mom made this once and I have been dying to make it ever since. Finally, Auva and I got around to it, and let me tell you: IT HELD UP. This is one of the tastiest soups in all existence, probably. It's a really simple dish - you cook some leeks in butter for a few minutes, then add broth, potatoes, and spices and let it simmer for 30 or so minutes! Then use an immersion blender to cream it up, add some parsley and additional spices (black pepper mostly), and enjoy. It was sooo creamy and hearty I swear I could eat it for every meal and be happy. I'm serious, guys, you have to try this!
